I love cooking, for the holidays and special ocassions I like to spend time in the kitchen with my mom and even if I like to cooking everything, desserts and drinks are my favourites.
There
is a special recipe that my mom cooks that I like to do and that is
spinach stew. Since I have lived alone for 3 years I have had to
learn how to cook different things and now that I started to be
vegetarian like 4 mounths ago I have had to investigate more about
what to eat to supply the meat and vary.
Over
time this recipe has changed and become one of my favourite to eat
and cook. The first thing I do is boil the spinach, while cooking I
chop the other ingredients in little pieces: onion, garlic, tomato,
red pepper and grated carrots. In a pot I fry the onion, garlic and
red pepper for a minutes to release flavor, then I add the tomato and
the spinach preecooked and some milk to keep moist and mix. The next
thing to do is add some breadcrumbs and cream to unify everything and
mix all the ingredients for a few minutes to obtain the desired
texture. Finally I add salt, black papper and a little of turmeric,
mix a few minutes more and is ready to eat! I occasionally accompany
the stew with baked potatoes seasoned with butter, rosemary or
oregano mand salt.
